In Ecuador's municipal markets, the sale of fresh fish, whole or by the pound, generates solid organic waste due to the evisceration process. Fish viscera can be used for the production of vegetable fertilizer, flour and even seasoning for food seasoning, so the objective of this article is to determine the environmental impact of the activities related to the fish gutting process. The observation technique was applied to make the process flow diagram and the methodology of the matrix of importance of environmental impacts. The results obtained showed that the activity of placing the fish viscera in a bucket or container in the Las Manuelas municipal market, located in the province of Guayas in the Durán canton, presented the greatest importance with a value of -44. Under these parameters, the need to take advantage of the fish viscera by selling them prior to a dehydration and grinding process to contribute to the circular economy and comply with the sustainable development objectives defined by the United Nations Organization was expressed.
